Well, the way I always do it for US Eastern to Eastern Australia is
subtract 9hrs and then just remember they're ahead a day.

This applies to the +1000 timezone, which should cover Melbourne and
Sydney, and which I know covers Brisbane.

I find it easier to work with numbers less than 12 and subtract than to
double-cross the 12hr boundary mentally.

They don't do DST, though, at least in Brisbane.  So if we're in DST,
I subtract 10 instead of 9 because we're "ahead" an extra hour.  The DST
observances may vary by state--I'm only confident about Brisbane not
honouring it.
