install & run 2 versions of filepro on one Server?

The short answer is yes, you can do it with appropriate settings of at the 
very least PFPROG and PFDATA/PFDIR system variables in your environment 
before you startup filePro. 

You _may _need to setup PFLICFILE if your filePro license file is in a non-
standard location, and same for PFMENU (menus), PFCONFIG (config file,
including printers), PFGLOB (global edits file).

I would not run the binaries from the different versions on the same filePro
data files or you'll run into lockfile problems, and of course, no newer
5.6/5.8 features on 5.0 data files.
