What do you do for scanning from withing Filepro

     I'm not sure what you are asking for.  

     Maybe all you need is a scanner that can scan in a document, like an
insurance form, and convert it to ascii text that can be imported into
filePro.  There are a lot of scanners that can do that.  

     If you are looking for a document management system that can scan and
file a document so that you can reference the document via a key number,
then there are systems that do that, like Paperclip:

    If you want to scan in an image, like a photo of a part or item you
sell, and link that filePro record to the image, then read up on "blobs" in
filePro.

   You mention creating documents, so if you want a content management
system that can hold scanned documents as well as other forms and reports
that come out of filepro and other sources, those exist, too.  ImageRight is
one I've worked with in the insurance industry.
