Finally a subject I can add some tiny tidbit of real historical data, when
we first arrived in SE Asia in the mid sixties, the Phillipines happened
to be the first place our squadron settled down in. We all went to town as
fast as we could and of course had to sample some of the local delicacies,
many guys tried the "Balloots" a duck egg at the fetus stage, buried in
the hot sand on the beach for a few days....yum yum .....and then there was
"Monkey Meat" smoked barbq on a 6" bambo stick, cooked on a tiny hibachi pot
on many street corners (we often wondered why there weren't many dogs & cats
around) washing that all down with a dozen San Miguel Beers .....laugh ..
BURP ....

Or you could use some nam pla, which is a Thai fish sauce. As I
Understand it, the "real" stuff is made by taking some fish (such
As anchovies), salting them, and fermenting them for a year. You
Then squeeze the liquid out, and that's the sauce.

I used some bottled stuff (which is probably made by taking several
Shortcuts) several years ago (I forget what I was cooking), and it
Made the kitchen smell like old sweaty gym socks. Fortunately, the
Smell did dissipate after a few minutes.
