Or you could use some nam pla, which is a Thai fish sauce. As I
understand it, the "real" stuff is made by taking some fish (such
as anchovies), salting them, and fermenting them for a year. You
then squeeze the liquid out, and that's the sauce.
I used some bottled stuff (which is probably made by taking several
shortcuts) several years ago (I forget what I was cooking), and it
made the kitchen smell like old sweaty gym socks. Fortunately, the
smell did dissipate after a few minutes.
