Hello Scott

I build my own with economical hardware and put thin client software
like thinstation or pxes  and an IDE flash with either CF or Disk On Module.
You can also use a Live CD or pxe boot.

The open source version of pxes is hard to find but is still available.
2x has a pxe boot solution that is free for small installations that is based
on the old pxes open source project.
