Follow up.
Steve,
You hit the nail right on the head. We did in fact change to Symantec Antivirus
version 10.0.2.2000, modified the settings to exclude the network, and various
folders (such as the PFTMP folder), and this sped up the performance considerably.
It was literally like night and day.
We also set the PFIGN environment variable to ignore all drives except the one that
filePro uses. Doing that helped us with a recent issue we had where a mapped drive
to a server that had recently went down was causing performance issues with filePro.
We removed that drive from the PFIGN environment variable, and it solved the performance
problem.
Again, thank you all for you quick responses, and suggestions.

Thank you all, so far, for your suggestions. As I may, or may not have
stated before, we do use Norton Antivirus Corporate Edition (7.60) here. I
am aware of performance issues with Norton Antivirus, but I don't believe
this is the issue, because it is running on both our test (the one with
filePro 4.8) and production (with filePro 5.0), and the speed difference is
night and day. Both machines, hardware wise, are almost identical HP
servers. I will check the other start-up programs that "watch" everything
we do, and see if there might be something there.
