I use a program call txt2pdf at my shop.  It works very well, assuming you
don't care about using graphics or anything (which we didn't).  It was very
easy to setup as I recall and it's been working for several years now
without me even touching it.  I believe it can work with STDIN, so you could
just pipe to it.  I use it as part of a script that also handles sending the
resulting .pdf to the user's workstation and popping it up in Acrobat
reader.
