VMware has a product a product called ESX Server that runs on the bare
metal and you install your virtual machines on top of ESX Server.  The
speed is very fast and you can expect to get 5-7 virtual machines per
CPU.  I'm currently working on a project to consolidate the number of
servers we have, including my UNIX box running filePro, onto a virtual
machine.  The performance is amazing and the amount of money saved by
reducing the number of physical machines is surprising.

You can get a subscription to VMware Technology Network which gives you
all their software for $299 including updates for one year.  It's an
inexpensive way to test and use their software in a development
environment.

Another cool piece from VMware is P2V Assistant that will take a
physical machine and turn it into a virtual machine.  I've used this and
it works really slick!
