"Seems OK" how?  There's not a single marker character on any line to
indicate quoted material.  It looks exactly like the text you typed
above.

It's called "the delete key".  (See also "trim".)

How could I possibly have top-posted this reply?  I am responding to
numerous distinct sections of your e-mail.  Should I have done something
like this?

    In response to paragraph 1, you should...

    In response to paragraph 3, I think...

    And getting back to the 2nd paragraph of your earlier message
    (the one dated xxxxx), I agree with Bob's statement (which is
    in the 4th paragraph in the previous quoted section).
